Overview

This is a two year course where you will achieve the Level 1 and Level 2 Diploma in Craft Catering and Hospitality Service. You will learn a wide range of professional cookery, food and beverage skills, along with knife skills, patisserie and general skills.

Participation in work placements to improve employability skills gives you a hands on approach and real life experiences of future career paths. Trips to London and local restaurants are also a part of this course. Guest chefs are invited in to share their knowledge with you. We have in-house student competitions to encourage creativity. College open evenings and prestigious gourmet events are an opportunity to showcase your skills.

This is a recognised qualification for all those wishing to take up a career in the hospitality and catering industry as either a chef or a career in food and beverage service. This course forms the Second Year of a full time programme of study. You must also have ambition, drive and a commitment to succeed in a very competitive industry.

Whilst studying Craft Catering here with us at HSDC, you will have the opportunity to join our Royal Navy Catering Academy (new for 2020), where you will work alongside Royal Navy chefs who will demonstrate the skills and qualities needed to work as a chef or steward in the Royal Navy. Working in partnership with the Royal Navy means you will have the option to explore this exciting and rewarding career. If you do wish to apply, you will be supported throughout the application process. In the Royal Navy Catering Academy, there will be elements of fitness preparation as well as the practical catering skills you will need. You will also be supported with your Maths and English skills if necessary. To help you make this decision, we have guest chef talks, appearances and trips to meet some of the staff on board. You may choose to join the academy if you have an interest in exploring this career path however you will not be obliged to enrol or apply for the Royal Navy Academy if it does not appeal to you after the course. It is intended to give you an insight into this exciting and rewarding career path.

You should have a good record of achievement, good references and have already shown a commitment for your chosen profession. At interview you will be expected to show an understanding of the catering industry and a strong commitment to the course.

Your course will be delivered by a series of lectures, workshops, visits, team teaching and demonstrations.

You will also study:

  • Food hygiene and nutrition
  • Health and safety
  • Commodities and sourcing of ingredients

As the programme provides specialist skill based qualifications in such areas as Kitchen and Restaurant, the course is predominantly practical. 

You will be involved in the realistic working environments in our kitchen and restaurant. This will involve planned evening activities, as well as other functions.

You are encouraged to undertake part time employment in an appropriate position in addition to your course. The College will help with finding jobs within the industry.

The College has links with major hospitality and catering organisations including the Royal Household, the D&D restaurant Group, Solent Hotel and local Michelin restaurants. Students enrolled on hospitality and catering courses will have the opportunity to join our ‘Catering for their Future’ scheme, which will provide work experience and career development from over 40 employers.

 

You will be involved in the realistic working environments in our kitchen and restaurants. This will involve planned evening activities as well as other functions.

As part of the program, you will be involved in visits and a weeks work placement within the Catering industry as part of the ‘Catering for their Future’ program.

You are encouraged to undertake part-time employment in an appropriate position in addition to your course. The College will help with finding jobs within the industry.

The College has links with major hospitality and catering organisations including the Royal Household, the D&D restaurant Group, Solent Hotel and local Michelin restaurants. Students enrolled on Hospitality and Catering courses will have the opportunity to join our ‘Catering for their Future’ scheme, which will provide work experience and career development from over 40 employers.

All of our teachers are leading subject and industry professionals. We offer digital learning to all students and it is promoted through learning and enhancing your IT skills.

Learning will be provided by lectures, workshops, team teaching, demonstration with an emphasis on the realistic working environment and work based testimonial.

The assessment methods for this course vary from practical tests, assignments and written tests; these will be set at regular intervals during the year and you will have the opportunity to retake.

This course requires you to purchase a uniform and kit and we include trips to enhance your learning and experience of industry. All of these costs will be explained at interview and students in receipt of financial assistance will be supported with these costs.

On successful completion of this course, you can progress onto a Level 3 course in either, Professional Cookery (Kitchen and Larder), Pastry and Confectionery or Apprenticeship. You may seek employment in the hospitality and catering industry.

A career in the Royal Navy - you will be supported throughout the application process. You should consider joining our Royal Navy Catering Academy at Level 2 if you wish to pursue this career path. In the Royal Navy Academy, there will be elements of fitness preparation, as well as the practical catering skills you will need. You will also be supported with your Maths and English skills if necessary.
