HSDC students welcome Michelin star chef to 74 South

An exquisite menu consisting of a range of mouth-watering dishes impressed customers at 74 South during another successful guest chef evening.

Michelin starred chef Angela Hartnett returned to HSDC’s South Downs Campus to prepare an array of delicious dishes alongside industry professionals including head chef Luke Holder, an ex student and a number of talented aspiring chefs from the College.

Angela, who has worked in a range of prestigious restaurants, made numerous TV appearances and boasts two cookbooks, supported the students whilst preparing a number of excellent dishes aimed to impress at the sold-out event.  

The menu included Orkney scallops with datterini tomato and verjus, red mullet linguine with fresh borlotti beans, radicchio, parsley and lemon, Herdwick lamb with spring vegetables, peas puree and lamb sauce and an almond tart with raspberries and vanilla cream.

To finish off the evening, guests were then able to enjoy some delicious madeleines and ricciarelli.

Iain Baillie, Professional Cookery Level 3 Diploma Course Manager, said:

“Angela has been involved with HSDC since 2009 and set up The Angela Hartnett Culinary Academy nine years ago.

Chefs play an important part in the transition from college to the industry therefore our guest chef events are extremely beneficial for our students.

Angela and Luke are extremely supportive and are always at the forefront of what is going on in the industry. They both are excellent at engaging with students, not just about cooking but about educating them on challenges they could face.”

Ex student Charlie Sturgess, who left HSDC’s South Down Campus in 2011 and now works as a Restaurant Manager at Limewood Hotel came along to help support students with front of house duties.

Charlie added:

“Chefs are extremely talented but front of house can be less represented and some people don’t see it as a career, therefore, I hope to encourage the next generation of front of house staff.”
