HSDC is proud to celebrate the remarkable achievements and journey of chef apprentice James Stefanaras, whose story exemplifies resilience, ambition and the transformative power of further education.

James arrived in the UK from Greece at the age of 18, having packed his entire life into a suitcase. Like many young people navigating a new country, he began working wherever opportunities arose. It was whilst working in a care home kitchen that he discovered a genuine passion for cooking – a moment that would quietly shape his future.
Inspired to turn this passion into a career, James enrolled as a chef apprentice at HSDC in September 2023, beginning his career as a commis chef working for Fuller’s. This marked the start of his professional journey, defined by steady progress, hard work and aspiration. Now, James has completed his apprenticeship, and currently holds the position of Chef de Partie at The Briny in Southsea, a clear testament to his development and talent within a highly competitive industry.
Throughout his time at HSDC, James fully embraced college life and opportunities beyond the kitchen. In 2024, James became a Student Governor at the College, representing the student voice, particularly Apprenticeships, with integrity, insight and commitment. His contribution was so impactful that in 2026, he won The HSDC Award, an honour traditionally reserved for members of staff, underscoring the depth of his contribution to the college community.
Penny Wycherley, HSDC’s Chair of Governors, congratulated James on this fantastic achievement, and spoke with pride about he conducted himself as a Student Governor:
“It has been a pleasure and an honour to have met and get to know James. He is not only a talented chef, but also a mature individual with a strong sense of social responsibility. He has contributed so much to the College community and will clearly progress in his career and in the wider life of his adopted country.”
Alongside his vocational training, James also completed his Functional Skills qualifications at HSDC, further demonstrating his outstanding determination and reinforcing the message that any barriers can be overcome with the right support and mindset.
The College also allowed James to co-author his own Greek menu, which was served in South Downs’ student-led restaurant, 74 South. This event sold out online within 25 minutes! Roughly 50 guests attended the lunch, warmly welcomed by the exceptional students at 74 South. After their drink orders were taken, the food service began, and this certainly didn’t disappoint.
Firstly, a sharing Mezze platter was served as an appetiser – homemade pita accompanied by tzatziki, olives and hummus. After this, a delicious chicken kebab served with rice and a fresh Greek salad, before the main event, an absolutely incredible moussaka.
James knew he wanted moussaka to be the main course at lunch, as it is a meal that means a lot to him:
“I lived in Greece for almost 20 years, and moussaka was one of my favourite dishes. The recipe used for the moussaka was actually my mum’s recipe, so it has a real personal connection to me and my family.”

More recently, James returned from an HSDC-supported international trip to India, where he undertook a work placement with Callebaut chocolatiers – his dream profession. He described the experience as cathartic, highlighting the warmth and encouragement he received from his colleagues overseas, and the personal growth the placement enabled.
Reflecting on his journey, James said:
“The main thing that this has taught me is that it is never too late to take your first step. The most important thing you can do is start!”
Speaking about his time at the College, James said:
“HSDC will open doors for you! As long as you keep working hard, the College will make your dreams happen, you just have to believe.”
Offering advice to both current and future students, James commented:
“While my time at HSDC is coming to an end, theirs is just beginning. The college is willing to open countless doors and opportunities. On a personal note – never make yourself smaller to fit places that don’t serve you. Dream big. Dare to go for more. Sometimes the biggest plot twist in your life is hiding behind the decision you’re hesitating to make.”
HSDC is proud to have played a role in James’ journey, with the College’s expert Apprenticeships department and training kitchens helping James to discover his true passions.
James’s journey is a powerful reminder of what is possible with courage, support and belief. His story stands as an inspiration not only to fellow apprentices, but to anyone considering a new beginning through further education.
